Cheryl’s “Squishie” potatoes
Ingredients:
Small potatoes (with or without skin) ~you decide how many potatoes you would like to use.
Salt and Pepper to taste.
Twisted Olive Tuscan Herb EVOO (or another flavor you like).
Directions:
Boil potatoes until soft.
Arrange on a baking sheet. I use 3 per row.
Cover with parchment paper and “squish” with a large spoon.You can add an extra step by forming the potatoes into a flat ball after squishing them! See photo.
Remove the parchment paper and drizzle with EVOO, salt and pepper to taste.
Bake at 425 for 10 minutes, flip over and bake for 10 additional minutes
Use a spatula to transfer to a plate.
